Guinness Chocolate Cake Recipe
Icing (Make icing first to allow cooling time.)
3 cups whipping cream
1 1/2 pounds (20 squares) semisweet chocolate
Bring cream to a simmer in saucepan, remove from heat, add chocolate squares,whisk until smooth.
Cool.
Cake
2 cups Guinness (1 can, 440 mls)
2 cups butter (cubed)
1 1/2 cups Frys unsweetened cocoa powder
4 cups all purpose flour
4 cups sugar
1 tbsp. baking soda
1 1/2 tsp salt
4 large eggs
1 1/3 cups sour cream
For Cake: Preheat oven to 350 F. Butter 3 8″pans. Line bottoms with parchment paper circles, butter paper.
Bring stout and butter to simmer in a saucepan, stir in cocoa, whisk untl smooth. Cool slightly.
Combine flour, sugar, baking soda, salt in large bowl.
Beat eggs, and sour cream in another bowl.
Add stout mixture to egg mixture; just combine.
Add flour mixture, beat just to blend. Fold batter until combined.
Do not over mix to prevent cake from having holes.
Divide batter among pans.
Bake cakes on centre oven rack until tooth pick inserted comes out clean. About 35 to 45 minutes.
Transfer to wire rack; cool 10 minutes. Turn out.
Cool completely.
Ice cake with 1 cup of icing between layers. Spread remaining icing over top and sides.
Smooth the icing on this chocolate tower with a warm knife.
